What the Heck is a Sunchoke??
Greetings!
Ah, Summer. No, not really. It's so hot, and I am really over it! Who's with me? Another Summer has flown by and now we are into the new School Year. Our oldest daughter just started Kindergarten at our local Elementary School last week. It has been a wonderful experience for her. She is enjoying everything about it. The School Bus! The Cafeteria! She even read her first book to me tonight before bed. I was so proud of her and thrilled for her.
Heading into Fall soon, I am getting ready to hunt down the local Fall Craft Shows that I LOVE to shop in the months of September and October.
I wait patiently, (well not really, but I have to) until this time of year rolls around. I start to unpack my Fall Decor for the house, as soon as September 1st hits!, I have everything Fall in my house decorated!
(I can see my Husband's eye's roll as I type this, lol. I love you babe, but I need those decorations out of the attic...again.)
I am so excited for it this year, I even have been forgetting that my own Birthday is coming up next week. Or, it could be that Birthday's don't seem like such a big deal to me anymore. At least not my own.
I enjoy planning, decorating and hosting my KIDS Birthdays like you wouldn't believe!
Just ask any of my friends or past Birthday Party attendees. They'll tell you, how "Martha Stewart" I can get. Which isn't a bad thing..ha ha

I have never heard of a Sunchoke in-my-life, but apparently it's a Jerusalem Artichoke! Please feel free to comment if you have ever tasted a Sunchoke before, as I am interested in seeing how it compares to an artichoke? I would like to know if I can't find any Sunchoke's in my local stores, will regular artichoke hearts substitute? I don't see why not?

The sunchoke is a little bitter but has similar texture and cooks the same. Use it as a substitute.
