Spring Break! And Mango Salsa Recipe

So our Spring break has officially started. I'm trying to fill up almost every day this week with activities for us to do as a family. So far I have a couple of days for Easter Egg Hunts, Shopping Mall time, and possibly the Florida Aquarium. We will see how much of it I will actually attend, but I'm glad I have some ideas planned for this week. My youngest daughter who will be 2 in June just recently started to act her age! Which means I will be trying as hard as I can to get her and her older sister moving and out of the house! In the meantime, today was a fun filled day at home. We dyed eggs, and made some yummy Easter Nests from chinese noodles, peanut butter, butter and butterscotch morsels! It's a very easy recipe and very fun for the kids to help with. We put two egg candies in each "nest" and popped them in the fridge right before dinner. They were already set and ready to enjoy right ater we ate! Tomorrow I am hoping to make the really good looking Blueberry Coffee Cake from the last posting. Here is my next recipe for a fresh yummy Mango Salsa recipe, (much healthier than the butterscotch dessert nests, lol) which will be great paired with or toppped onto a fish like salmon! My favorite fish! Enjoy and have a great Sring Break, whenever it is!


Mango Salsa Recipe Prep time:
 10 minutesAdd to shopping list Ingredients
1 ripe mango, peeled, pitted, and diced (about 1 1/2 cup) (See: How to Cut a Mango) 1/2 medium red onion, finely chopped
1 JalapeƱo chile, minced (include ribs and seeds for a hotter taste if desired)
1 small cucumber, peeled and diced (about 1 cup)
3 Tbsp fresh cilantro leaves, chopped
3 Tbsp fresh lime juice Salt and pepper to taste

Also good with diced red bell pepper and jicama. Method Combine all of the ingredients in a bowl. Season to taste with salt and pepper. If the salsa ends up being a little too hot or acidic for your taste, you can temper it by adding some diced avocado.

Back on Track

I am heading full speed into yet another Holiday! My last posting was all the way back in August. I have been one busy Mom. Aren't we all?! I am happy to be posting this recipe I came across on this Blueberry Coffee Cake courtesy of Joyfulhomemaking.com! As soon as I finish this post, I will be heading to the grocery store to purchase my blueberries! The rest of these ingredients I already have on hand. We will be getting into blueberry season coming up pretty soon, so I'm getting excite to take the Hubby and our girls to thelocal Blueberry patch to pick our own. Anyways, here is the recipe, let me know if you have any reviews or recommendations if you try this recipe. Blueberry Coffeecake 1/4 cup butter 1/2 cup brown sugar 1/4 cup white sugar 1 egg 1/2 cup milk 2 cups flour 2 teaspoons baking powder 1/2 teaspoon salt 2 1/2 cups blueberries Topping: 1/2 cup brown sugar 3 Tablespoons flour 1 teaspoon cinnamon 1/2 cup pecans, chopped 3 Tablespoons butter In a mixing bowl, cream together the butter, sugar and egg. In a separate bowl, stir together the flour, baking powder and salt. Then add the milk and flour mixture alternately to the creamed mixture while beating. Once combined, gently stir in the blueberries, and pour into a greased and floured 9 inch pan. For the topping, combine all ingredients except butter, and then cut in the butter with a pastry blender or I use two butter knives. Sprinkle over the top of your batter and then bake for 45 minutes in a preheated 375 degree oven, or until a knife inserted in the middle comes out dry. from the blog http://www.joyfulhomemaking.com/

What the Heck is a Sunchoke??

Greetings! Ah, Summer. No, not really. It's so hot, and I am really over it! Who's with me? Another Summer has flown by and now we are into the new School Year. Our oldest daughter just started Kindergarten at our local Elementary School last week. It has been a wonderful experience for her. She is enjoying everything about it. The School Bus! The Cafeteria! She even read her first book to me tonight before bed. I was so proud of her and thrilled for her. Heading into Fall soon, I am getting ready to hunt down the local Fall Craft Shows that I LOVE to shop in the months of September and October. I wait patiently, (well not really, but I have to) until this time of year rolls around. I start to unpack my Fall Decor for the house, as soon as September 1st hits!, I have everything Fall in my house decorated! (I can see my Husband's eye's roll as I type this, lol. I love you babe, but I need those decorations out of the attic...again.) I am so excited for it this year, I even have been forgetting that my own Birthday is coming up next week. Or, it could be that Birthday's don't seem like such a big deal to me anymore. At least not my own. I enjoy planning, decorating and hosting my KIDS Birthdays like you wouldn't believe! Just ask any of my friends or past Birthday Party attendees. They'll tell you, how "Martha Stewart" I can get. Which isn't a bad thing..ha ha Anyways, Here is a simple and very interesting sounding recipe, courtesy of the Daily Meal. Sunchoke Hummus with Meyer Lemon Recipe. I have never heard of a Sunchoke in-my-life, but apparently it's a Jerusalem Artichoke! Please feel free to comment if you have ever tasted a Sunchoke before, as I am interested in seeing how it compares to an artichoke? I would like to know if I can't find any Sunchoke's in my local stores, will regular artichoke hearts substitute? I don't see why not? In any way, it looks scrumptious! Until later! Becky
