Update on Joe's Produce!

Hello my fine readers! I was finally able to stop by again and visit Joe's Produce stand in Spring Hill. I brought my daughter and took some pics.

I gave Joe a print out of my article and the nice posts my readers commented on. He was delighted to see his picture on the computer. let alone on a Blog. I gave him a copy so he could take it home to show his wife, frame it, dip it in gold, or whatever tickles his fancy. (It's probably in the trash) But I am going to think positive and hope that he at least appreciated my effort to feature him on my Blog and hopefully direct some business to his stand.
The produce I bought over a week ago now, is still very good and VERY tasty! last night I sauteed up some zucchini I bought. First I washed it, and sliced it.


Then I heated up my skillet on med/hi heat and sprayed non-stick spray on it. I tossed in the zucchini slices and seasoned them with salt and pepper.

(Now, you can saute them like this for about 5 minutes and they will come out very tasty and healthy, but if your like me and don't mind adding a little extra flavor to your veddies, then you can add a tab of butter to your skillet. he he)


This was a very yummy side dish to our grilled chicken and pasta dinner last night. Very flavor-ful. I will make this again!

  1. looks good! You could try some vegan butter to make it healthier or use vegetable stock to saute with. Just keep adding stock as it evaporates, and for very little calories it adds a lot of flavor!
